Classy and full of flavours
50g Roquefort cheese
150ml low fat natural yoghurt
2 tbsps chopped chives
Mixture of leaves – lambs lettuce, radicchio and lollo rosso
2 ripe pears
Freshly ground black pepper
Place the cheese in a bowl and mash with a fork. Blend the yoghurt into the cheese until the mixture is smooth.
Add the chives and season with pepper.
Tear the variety of leaves into bite size pieces and arrange them on a plate.
Quarter and core the pears then cut them into slices.
Arrange the pear slices over the salad leaves.
Drizzle the dressing over the pears.
Option: Garnish with a few whole chives.
