Godfather Sorbet

Godfather Sorbet

This is my own creation. I was with my wife in a cocktail bar and the barman suggested that she try a godfather cocktail. During conversation with him about taste, she said how much she enjoyed Amaretto. The result was a Godfather cocktail, which is basically Jack Daniels, Amaretto and coke with plenty of ice. So, whilst cooking a special meal for us, I decided to transform this cocktail into a sorbet. What a success! I tried several different combinations of whisky and settled on Scotch rather than J.D.

Remember, that alcohol does not freeze, so if you put in more than recommended, you will end up with a liquid swill! This combination should leave you with a good sorbet texture.
Water 700ml
Caster sugar 500g
Lemon juice 300ml (about 10 lemons)
Scotch whisky 100ml
Amaretto (Disaronno) 100ml
Egg White 1

Step 1

Dissolve the sugar in a pan in 700ml water over a low heat and then bring to a boil for 2 minutes and then cool completely. Once cooled, add the lemon juice, whisky and amaretto and mix thoroughly. Finally, add the egg white and continue to mix. Freeze the mixture.

Step 2

Depending on whether you have used more than the stated doses of alcohol, your sorbet should freeze just short of being solid. If it is frozen solid, allow it to defrost slightly and then whizz in your blender.

To Serve:

Scoop or two into a glass bowl. Optional: top with mint.
